Summer is definitely in full swing with temps hitting well into the 90's and lots of that Georgia humidity that you can always count on. With a full travel schedule and sporadic work at the school I have a little time on my hands to spend a little more time in the kitchen, and other than chopping up endless amounts of Watermelon, here are some pictures of what I've attempted here and there.
This cookbook from Racquel has not let me down yet! I recently tried the G-Free Brownie Recipe and it was a huge hit with Shane and I both-none of that gluten free after taste and the texture is
great!!!!!

Fresh Salsa! I was afraid we had made too much, but between the both of us
it didn't last very long!
We made homemade pizzas prompted by a 50 % off sale on some new UDI G-Free personal pizza crusts we found : ) The key to success was quality ingredients for our toppings. The crust was sub par, with a texture more like a slightly crisped pita bread. We used a jarred Spaghetti Sauce that great improved the pizza (instead of pizza sauce). Shane opted for 1/2 pepperoni 1/2 Hawaiian, and I went a little out of my norm and made a black olive, spinach, artichoke and feta pizza. They were GREAT!
Tried a new recipe the other night with a pasta version of Spinach and Artichoke Dip. We added some chopped grilled chicken and other then an interesting texture from the chopped Spinach, it was enjoyable.
While we were in TN I couldn't resist picking up a few unique mugs for my ecclectic mix.
This definitely screamed "I got this mug in the mountains"

Tomorrow Shane and I head out on a road trip destined for Little Rock Arkansas to celebrate Lindsey Scholl and Peyton Greenwald's wedding : ) We will also soon be celebrating our 1 year anniversary and heading out to Chicago to visit family and friends within the next week and half as well. Lots left on the schedule for the summer and hopefully I'll get on here to update you all along the way!

Glad the cookbook hasn't disappointed yet! I really need to try that brownie recipe. Glad you getting more kitchen time. I am finally getting back in there myself. Gotta make my homemade caramel popcorn for you. We are going to see you guys so soon! Can't wait!
