I Like Food

After apartment hunting one afternoon, Shane and I decided to check out a pizza spot rumored to serve G Free, ZPizza. They not only serve gluten free but they have amazing pizza combinations and use organic ingredients. They have great salads as well and you leave feeling like you ate some great food but not like you need to get your stomach pumped or go into a food choma-which sometimes pizza can do! I ordered the Provence (pictured below) and Shane ordered the ZBQ pizza (BBQ chicken pizza) He raved about his pizza the rest of the day and even claimed it as the best tasting bbq chicken pizza he had ever had! We also both started off with a salad (Me-Greek, Shane-Pear and Gorgonzola) Both were Yum!

Unfortunately, there are no Z pizzas YET in Illinois, but they have locations all around the U.S. -so check it out of you're up for some (slightly pricey) but delicious pizza that won't leave you regretting your choice. The guy who made our pizzas also came out and brought me a complimentary gluten free brownie : ) My homemade brownies are better-but he definitely secured us as future customers!

. . . . . . .

Okay. . . now for dessert : )

I haven't baked for a while, but with a three day weekend and some free time on my hands I couldn't wait to satisfy my sweet tooth with a new recipe.  I'm trying to figure out what I actually did so I can replicate it ( I used a combination of my own recipe and 3 others to make the cake to my liking....and now I regret not writing it down....whoops!)

My challenge: a lemon raspberry layer cake!

Here are some pics below (It didn't go as smoothly as I planned-but it was probably some of the best cake I've ever had-mixture between a moist cheese and raspberry danish-but in cake form!):

 I made the lemon cake layers the night before.
 Raspberry filling (not the right consistency....)
 The height of my frustration.....oozing filling and a leaning tower of cake!
 Lemon cream cheese frosting
 Though I am an amateur I thought I would test out some of the baking supplies my mom got me!
 I attempted to mix up a darker raspberry colored frosting-but it turned out baby pink : (
 Pretty sloppy and embarrassing-but there is a first time for everything I suppose.

Dessert=Success!!!!
The cake is light, but creamy, moist, and sweet!

Now I've just got to remember how I did it. . .
