Hello Bye Week

This past weekend was a much needed break for Shane and I(Shane finally got a full weekend off and I finally got a whole weekend with my husband!!!).
Shane commented that,"This was just a normal weekend, but it felt like vacation!" I can't imagine what it will be like after the season when Shane is only working a 40-50 hour week as opposed to the 80 hours he puts in now!
We kept the weekend entirely open in order to get some much needed rest and rejuvination. Friday night after doing grocery shopping and getting my car towed to the second automechanic place, we went home and made a mess in the kitchen as we created our own homemade pizzas. (Mine being GF of course.)

Shane Shredding Chicken for his BBQ sauce.

Sauce Ingredients. . . .

Finished Product!

Gluten Free Creation. . . .

The Toppings....we tried Turkey Pepperoni. It definitely doesn't have the same kick or texture as regular pepperoni, but it was worth a shot.

Shane went with Hawaiian and BBQ Chicken pizza, and I went with a more traditional pepperoni and black olive.

Then we both took a stroll down memory lane and watched Mighty Ducks 2- D2- One of Shane's favorite movies from growing up.

Saturday we were able to sleep in, run errands, and Shane was able to get some homework done for his teacher certification classes. We also spent some time making homemade GF cinnamon rolls together, with homemade "Cinnabon" icing.

Cinnamon Rolls?

Icing!
I could barely wait to try them--but we saved them for Sunday Morning breakfast--and other than the rolls slightly falling apart on their way to the pan and becoming more of a streudal than rolls--it was pretty darn successful. Shane and I were only able to eat a little piece each though--it was so rich that I almost had a headache by the end of the 2nd bite--we might tweak it in the future--but it was definitely not lacking in taste or sugar!!!
High lights of our weekend were our second visit to Cross Point Church, where Pastor Merritt continued his series on the Will of God--and also Sunday afternoon and night we were able to finally carve out some time to Skype with both of our families!

Monday was Shane's Birthday and though we spent most of it at work it was fun for him to come home to lots of love from our families that came in the mail that day : )

Here's His Cake(Flourless Chocolate Cake with a Chocolate Ganache and Choc. Covered Strawberries!).

This week has just begun but we not only have the possibility of Brad and Tara coming into town to visit this upcoming weekend to look forward to--but a 3 day weekend at that!!!

  1. Hey mish! Sorry for the some-what choppy skype experience tonight. It was so great to see your faces and hear your voices, though! You'll have to send the Cinnamon roll/streusel my way when you get the chance. Did you make that bday cake for Shane?! It looks awesome. I am way impressed.

  2. Hey Roc--Skyping was great-we loved seeing and hearing you both and it was great to see Gideon and how much he is growing, it was hard because I really just wanted to squeeze him!

I'll def. send you the cinnamon roll recipe when I get a chance!

And yes-that was his birthday cake and I did make it! We still have most of it in the fridge-it was VERY rich--but we tried to set it off with some whip cream!

Miss you a lot and talk to you soon!
