Snow Day # 2

I was shocked yesterday as the hours ticked by and nothing seemed to move outside. Cars stayed put, and not one ounce of snow was shoveled! No sounds of plow trucks or scrapes of shovels and the inevitable happened-school was canceled yet again-this time they called it as early as 7 p.m.

I told Shane it was like we were living in days of old out on the prairie waiting for Spring to come and the snow to melt : ) It's all starting to make sense (the panic at the grocery store--stockpiling milk, eggs, and bread)-because at this rate we will be locked up for the rest of the week. With temperatures scheduled to drop and inches of ice on the roads we can't imagine how school will reopen tomorrow. Lindsey Hardy reported that there are only 8 plows in the State of Georgia so things aren't looking like they will be cleaned up any time soon.

Shane hasn't been feeling any better so we decided that last night we had to have a plan of action for our 2nd day off. Last night I was starting to get antsy with cabin fever and told Shane if we had any more days off I might start making a tally on the wall with chalk! We decided to make a point to venture outside, start our cars, clean them off, and walk a few miles to the target down the road to see if they were open and get some supplies : ) and as you can see I had a little free time on my hands to do some blogging!

It was completely quiet outside (11 a.m.) and when we made it to the main road we were shocked that there was no one in sight. It felt like we were the characters in Cormac McCarthy's "The Road." Two weary travelers trekking through post-apocalyptic America looking for hope and survival.

There were only a handful of other workers and customers-some of which had also walked. We stocked up on kleenex, eggs, and tried getting some last minute ingredients I had earlier forgotten for chili tonight-they didn't have exactly what I needed, but we improvised-desperate times call for desperate measures!! We also have been hearing good things from all of you about the Neti Pot and with Shane's reoccuring sinus infections it seemed like something he should try. On our way home as we passed a couple sitting on the corner of the main intersection by our complex, the man commented "Wow, Target is open huh? every Walmart in the county is closed down today." Shane and I had to smile : )

The other day I stole a recipe that Lauren had been meaning to try-they are called Hasselback potatoes. They were great! It's a nice twist on a baked potato-you carefully cut thin slices ALMOST all the way down the potato, but not far enough to cut all the way through-then insert a mixture of parmesan cheese, olive oil, paprika, and garlic between each layer, finishing up by brushing the potato with the rest of the oil mixture-garnishing it with chives and parmesan once cooked (40-45 minutes 475 F.) It smells great and is crispy on the outside and tender on the inside.

with the new Gluten free baking cook Racquel bought me I am looking forward to picking up some new cooking & baking tips for allergy sensitive food!

I am going to start trying a new Gluten Free Baking recipe from my new cookbook each weekend and then post pictures and reviews on my blog for anyone looking for gf baking recipes that are actually worth the work! The author boasts of recipes that taste just as good as good as the "real thing." I was skeptical until I tried the chocolate chip cookie recipe this weekend-Sooooo Good! The perfect texture cookies that stays chewy even after being cooled, but also has that flaky crispy bite that a cookie should. Better than any homemade chocolate chip cookie I have ever had! Can't wait to try the other recipes!

  1. This is totally hilarious. I-90 would still have bumper to bumper trafic on a day like that here...haha...seems fun, though! Love the Target adventure. We saw "The Road" too. Oh, if Shane like the Neti Pot, I see deals to get them for free periodically on my deal websites. I am so trying that cookie recipe. Just got a few ingredients I didn't have and am putting it on my adjenda for tomorrow. Just finishing up the GF brownies I made over the weekend, so I guess it's about time for a new treat :)
