Gluten Free Finds and the Fall



I was shopping at Kroger the other day and came across this great find!!! Even if you don't like pancakes, there are lots of recipes already on Bisquick's website using it as a simple baking mix.

One I wanted to try out was the "Impossibly Easy French Apple Pie."

Final Product.
Not as tasty as the apple crisp I usually make in the Fall, but def a great GF option.
(I also realized that pulsing the streudal topping in a food processor makes the consistency so much better than just using a fork or pastry cutter!)

This was something a woman at work told me about--it has GF taco seasoning. Only downside is that you have to buy this entire kit in order to get it : ( , thankfully in most cases you would need to buy the shells anyway! * Mom, the second box here is for you :)


Shane will only be home for 1 meal this week--tomorrow! ( His certification classes start this week so after practice each day he'll be doing that until 10 at night : ( I'm thankful its only a 4 day week) So I figured I would try and add a new meal to the line-up--Eggplant and mushroom lasagna with a side of grilled and seasoned polenta. It'll be GFree and hopefully tasty!


In Other News. . . . . .


It's September. . .
and Football season has just begun! This week at school there was a competition between all of the homeroom classes to see who could decorate their doors best for Friday's game against Archer. With our head sub filling in for a teacher all week long I jumped in her room and we made sure to give our kids a fighting chance : ) I forgot my camera but took pictures on my phone of some of the doors! Once I have time to transfer it I will post them! It's a fun way for the kids to show school spirit and get in the competite mode(though to be honest the sub and myself were def. more competitive than the freshman in the class!)
Friday afternoon they announced the winning classroom while I was talking with a teacher in the hallway. . . WE WON..I may or may not have jumped in the air and given a fist pump or two :)

Also. . . how it happened I do not know, but Mt. View made game of the week AGAIN and will be highlighted in the local news! The game was close---with a final score of 17-13. We intercepted the ball with 2.5 minutes to go and ran it in for a touchdown only to be penalized with an illegal ineligible receiver down field--after that we were unable to finish it and lost the ball on the 10 yard line.
Hopefully we can dig deep and gain some confidence for this weeks upcoming game against Lanier.
With college football recently kicking off, it should be a jam packed Fall season.

This weekend Shane's parents come to visit for the weekend and will get to be out here for one of our games. We really can't wait to have family out and are sooooooooooo excited when both of our families will be together in Chicago this Christmas. .. . CAN'T WAIT!
This weekend is much needed as Shane has been going non-stop--and with football he doesn't really get a weekend, so the one extra day is such a blessing!
